The Hay
Shed Hill Estate is a modern wine making
and cellar door facility located on
Harmans Mill Road, Wilyabrup in the heart
of the MargaretRiver "golden triangle".
Nearby
wineries include Moss Wood, Evans and
Tate, Cullen and Howard Park. The boutique
winery is utilised to produce and mature
the established icon wines under the
flagship Hay Shed Hill label. It also
houses the cellar door sales outlet for
the Hay Shed Hill and Pitchfork labels.
A
renovated period homestead and gardens
located on the property completes this
idyllic setting. The vineyard consists of
a number of varieties including Cabernet
Sauvignon, Chardonnay and Sauvignon Blanc
and a number of the vines are over 25
years old.
From the
moment you turn in to the driveway, you
will appreciate that this is one of
MargaretRiver's most charming vineyards.
Bring your camera, a picnic lunch and take
in the scenery. Enjoy tasting some of
MargaretRiver's finest wines.
If you
want to make good wine a good starting
place is to consider all the factors that
come together to make wine and get it
clear in your head the hierarchy of
importance of each of these factors. You
have to look at region, vineyard site,
viticultural management grape variety,
winemaking, oak etc.
After 15
years of looking at the transition of
grapes to wine it has become increasingly
clear that overwhelmingly the single most
important factor is clearly site. A lot is
made of region, some regions are judged to
be better than others. For instance it is
widely said that Margaret River is a great
wine region - but that is simplistic
because Margaret River has, like every
other wine region in the world, lots of
very poor sites. Look at Burgundy, it
makes, in my view, the most sublime wines
in the world but also some of the worst.
So it is clearly not enough to just be in
the broader boundaries of Burgundy - you
need to have a good site. Whilst the
quality extremes may not be quite as
severe in Margaret River because it is
generally more benign and less extreme
than Burgundy for grapegrowing it is
nevertheless true that site attributes are
the most important quality factor in the
equation.
On leaving
University I was, naturally convinced that
it was all about management but if I have
learnt one thing it is that a good site
will shine through no matter what the
human intervention, and a poor site will
resist even the best human inputs and
refuse to grow good grapes. Obviously the
best combination is a good site and good
management.
